Herbalism is one of the true sciences that is time tested as well as being 'old' in the truest sense of the word. There are many famous names that practiced this treatment system.
It is a science that used the science of observation. Observation was made of sick animals and what they would eat in the wild to try and help themselves with, this was then given to people who had similar symptoms.
This knowledge base was then handed on or written about, with the results of what happened or could be expected by giving a particular herb.
One of the 'laws' of herbalism was that a person should only eat foods that grew within a 20 to 30 miles radius of where a person lived. Which may sound silly at first, but when you really think about it, it was very good advice.
The plants that grow within that radius are 'living' in the same climate that you are and with evolution they have what is needed to survive in that particular area, so it makes sense to eat the produce of that area including the herbs.
A sick animal couldn't go to China for Chinese herbs, it had to find out what would be best for it in the area and where it flourished and grew. As silly as this sounds this is still one of the 'foundational' ways of treating someone with herbs.
Maybe another way of looking at this, is that if its a very hot summer would you go to a restaurant and eat a vindaloo curry ? Why, because its so hot, you would probably go for a salad or something like that, same thing as above just a different perspective of looking at it.
Why are some herbs called culinary ? Well apart from making the meal taste better they also have a therapeutic action as well, which ties in nicely with the statement "you are what you eat".
Herbs have different actions to homoeopathic remedies, and dependant on the condition one can be used before the other, to start the healing process off which is innate within all of us.
Garlic is a favourite of quite a lot of people, but in some imbalances it can actually make the person more ill or not help them at all.
St.Johns Wort, has out stripped sales of Prozac and other anti-depressant drugs, but now the authorities that be, have decided that its too dangerous for you, even though its been used for this symptom and others for well over a hundred years !
Clinical testing in the clinic reveals these imbalances and which foods / herb groups would be best for a person.
